- Soaked or Canned chickpeas
- olive oil
- Chopped Red Onion
- Curry Leaves
- Chilli Powder
- Diced Tomatoes
- Coconut Milk
let’s go in and start dinner recipes cooking first we have my creamy chickpea curry in a large nonstick skillet over medium to high heat, you are going to add in your olive oil, chopped red onion, garlic, which I’m actually going to grate on my little grater ceramic here I’ve been loving this thing I’ll link it below
I’ll also do the exact same thing with some raw ginger ooh I’ll just grate it to finely chop and then you’ll saute it all for about a minute before adding your spices, we’ve got some curry , cilantro, cumin, chili powder and paprika.
I like to saute the spices just to bring out the flavor and then I will add my chickpeas These are just canned chickpeas I also have some diced tomatoes from the can as well as some milk coconut also from cans, this is basically all pantry staples in one pot, cook together, mix everything together and let it simmer so all the flavors come together in at this point
you can also season with a little salt an and pepper to your liking for the last minute or so,
I like to add a couple handfuls of fresh veggies while they are baby spinach or kale just to add some extra leafy greens to your food and it just wilts in there is a great way to introduce some extra veggies into your food to serve.
I love to enjoy this with some cooked basmati rice or quinoa or you can even have it on its own, it’s so versatile and filling.
